Healthy Eats: Buffalo Chicken Bowl Recipe

Let me just start by saying that this meal is my ultimate favorite. Literally. I can't get enough of it and have absolutely no remorse eating it for lunch, dinner, or as a snack.
The best part? It's super easy to make, healthy, and creates amazing left overs.
The Recipe

2 cans of corn
2 cans of black beans
2-3 Avocados
6 lean chicken breasts
1 cup of buffalo hot sauce (My favorite is Franks Buffalo Sauce)
1 TBS of minced garlic
1 bag of shredded cheese (I use Sargento 4 Cheese Mexican)
How To Make It

1. Cook chicken, garlic and buffalo sauce in a Crock Pot for 3 hours on high
2. Shred chicken once cooked
3. Drain and rinse the corn and black beans and add them to a bowl
4. Top off the veggies with your shredded chicken 
5. Sprinkle a hand full of shredded cheese on top and follow with slices of avocado

Keep it pretty or mix it up!

Super easy, right? Perfect for a quick meal and even better for an already prepared snack the next day. While trying out new recipes I look for taste, nutrition, and easy preparation. These buffalo chicken bowls get a check for all 3!
